Here at Sanitary Tortilla Company we make GENUINE CORN TORTILLAS every day. We make them: "Fresh from the Masa; Fresh from Corn". To say that we make corn tortillas "the old fashion way" is an understatement. The method we use to transform our real corn into real corn tortillas is a process called nixtamalization. Nixtamalization is a natural "cooking" process that was discovered, developed and employed over 3,500 years ago. Many early civilizations in the Americas used this process: there were the Aztecs, the Mayans, the Chibchas, the Hopi, and various Indian tribes of North America. Nixtamalization evolved into a cooking process that employs the use of calcium hydroxide, potassium hydroxide, or sodium carbonate to create an alkaline solution where corn kernels are soaked, cooked, steeped and rinsed to soften the corn kernel and remove the outer hull. What remains of the corn is then ground into a mushy dough called "masa". This dough is then flattened and cooked into the tortilla you have come to know and love. It is interesting to note that as scientists began to investigate the nixtamalization procedure they discovered that this labor intensive, ancient process actually enriched the corn by naturally adding niacin to the "mix". This meant that by combining beans into the daily meal with the nixtamalized corn a person could obtain the amino acids needed to balance one's diet and "complete the protein" for better nutrition. Better nutrition meant (and means) a greater resistance to deficiency related diseases like pellagra. So there is indeed some wisdom to insisting upon doing it "the old fashioned way". We'd like to think that we employ this labor intensive process to create a tortilla that has superior quality and a delicious, fresh corn taste. As luck would have it, we are not alone in this belief. There are several academic studies that suggest tortillas made from nixtamalized masa "taste better".
